My blog is so neglected. I’m busy with a move across the country and my classes. I am currently in my Endocrine intensive class. LOVE IT. I do miss my blog and really want to get back to posting more regularly but, sadly, I don’t see that happening until perhaps next fall. In the mean time hopefully I can pop in and post a few goodies like this one.

If you like bacon and/or your family likes bacon this post is for you. I’m going to share the easiest way to make the best bacon ever. It’s very possible that a lot of you already know this secret but for those that don’t you’re going to love it.

BACON IN THE OVEN!

You can make as little or as much as you want. The best part is you pop it in the oven, set the timer and walk away. No more burnt bacon (my biggest problem)! I can’t seem to focus on cooking bacon when I make it on the stove. I just don’t have the attention span necessary for perfectly fried bacon.

Here’s what ya do, take a cookie cooling rack and put it over/on a cookie baking sheet. Lay the strips of bacon on the rack and then put the whole thing in the over. I set my oven to 260 degrees and cook for about 30 minutes. The time will vary depending on the thickness of the bacon and of course, how you like it cooked.

Perfect.

The only problem is, if you make the whole pack of bacon, you may eat the whole pack of bacon. Not only does this bacon look good, it tastes good. My daughter got turned off of bacon at college (hard to believe). I’m not sure what they do to it at her school but she can easily turn her nose up at bacon. Not this bacon. She couldn’t get enough.

I usually make as many pieces as I can get on the rack. I then eat a couple of pieces and try to save the rest for crumbling in salad or some other cooking adventure. If there are still pieces left in the morning I will have them for breakfast. Very rarely are there any left to save for later.

If you are cooking for a crowd this makes it so easy to have perfectly cooked bacon for the masses. My sister gets extra tricky and uses a double-decker cookie cooling rack. Oh, and if you like to cook with bacon grease, the cookie sheet will be full of perfectly melted bacon grease ready to pour into your favorite container.
